Recipe of the Week... Spicy Eggplant



Ingredients:
-Trader Joe's punjab eggplant
-Trader Joe's "just chicken" (if you would like to make it a vegetarian recipe, use your favorite can of beans)
-Trader Joe's pre-cooked brown rice
-Frozen or fresh broccoli

Directions:
Steam broccoli in microwave or on the stove. Warm brown rice and put it into a bowl. Cut "just chicken" into bite sized pieces and add to the rice. Open the pouch of the punjab eggplant...add to the rice, chicken, and broccoli. Re-heat the yummy mixture in the microwave or in the oven. Enjoy the spicy love!
